Peanut Butter Dark Chocolate Prownies

If last week’s super indulgent chocolate brownies fall into the ‘oh no’ category then these prownies (healthy  low-carb protein brownies) might be more your style. The trick to keeping these moist is to use a combination of protein powders. For this recipe I chose to experiment with hemp protein.

No, these aren’t the sort of brownies you might have had in uni, hemp protein and oil do not contain psychoactive quantities of the drug ingredient, THC which is virtually zero. You can smoke a field of industrial hemp and likely get a headache only. Hemp protein appears to be particularly good for baking as it doesn’t go rock hard. If you don’t have hemp protein, rice or pea protein may be substituted. Using 100% whey protein will make these firm like biscotti.

Ingredients

  • 30g (1 scoop) hemp protein, or rice protein
  • 30g (1 scoop) whey protein, chocolate flavour
  • 1 pinch salt
  • 1.5 tbsps psyllium husks
  • 30g (1 tbsp) Peanut butter, smooth or crunchy
  • 1 egg, beaten
  • 120g egg whites
  • 20g (2 pieces) dark chocolate, 85% cocoa

Instructions

  1. Preheat an oven to 180ºC/350ºF. Lightly spray 2 silicone muffin holes with cooking spray.
  2. In a large mixing bowl combine the protein powders, salt, sweetener and psyllium husks.
  3. In a small bowl combine the peanut butter,  egg, and egg whites. You may need to soften the peanut butter spread slightly first by heating it in the microwave.
  4. Add the peanut butter mixture to the protein powder mixture and stir until thoroughly combined, making sure you scrape the bottom of the bowl. Fold in the chopped chocolate and taste for sweetness (if you aren't worried about eating raw batter).
  5. Divide the mixture amongst the muffin holes and bake for 12–15 minutes or until just set and still slightly soft.
