Heavenly Choc-coconut Spread

 You could pay big bucks for a store bought jar of choc-coconut butter or you could make your own for pennies and customise it to your liking. Add some cocoa nibs for a crunchy texture, or add some spice for a bit of a kick.

Ingredients

  • 125g (2 cups) shredded coconut
  • 8g (4 tsps) coconut oil
  • 12g (2 tbsps) cocoa powder, (raw cacao or dutch process)
  • 2 tsps Natvia, or other granular sweetener

Instructions

You will need to do this in two batches if you use a rocket/bullet blender. I used the small flat blade.

  1. Blend half the coconut until it forms a smooth paste, add half the oil, cacao and sweetener.
  2. Blend again until smooth and taste for sweetness.
  3. Scrape into a jar and repeat.

Don't forget to lick the spoon! :P
