Hormone-free, free-range chicken consume the greatest range of nutrients and therefore contain the most nutrients when consumed.

Chicken breast is the leanest cut and best for cooking quickly, such as barbecuing and stir-fry. Chicken breasts needn’t only be boiled, try poaching them with different spices (p. 80) or roasting them in bulk (p. 96) or simply marinading them and doing a big barbecue cook-up.

Chicken thighs are perfect for dishes that need a longer and slower cooking process, such as curries and casseroles. They contain slightly more fat, but are only 10 calories per 100g/3.5oz more than chicken breasts.
