The saying goes ‘breakfast is the most important meal of the day’. This is because it replenishes nutrients used by the body overnight to heal, repair and maintain the body.

A filling and nutrient-dense breakfast will also set you up mentally to continue with a healthy day.

This section of the book contains recipes based around unrefined whole grains, such as oats, and protein-rich sources, such as eggs. However, don’t limit yourself to Breakfast ‘breakfast food’: leftovers from last night’s dinner can often be more convenient, or, for something different, try filling your body with good fats and protein with a steak or piece of grilled salmon. I always find this very energising.

When choosing eggs for these dishes I recommend purchasing free-range eggs, because your body only gets the nutrients of the animals you eat get. Don’t be scared by egg yolks, they’re full of nutrients not available in the whites. Unless you are predisposed to cholesterol issues, they do not pose any greater health risk than other fats.
