7 minute Asian Chicken Noodle Soup- Quick Eats

Are you searching for a healthy meal for one in under 10 minutes? Do you need a meal that will fill you up and warm you up? Look no further. If you can boil a pot of water you can make this recipe. It is filled with shortcut ingredients, proving fast food doesn’t have to be unhealthy.

Ingredients

  • 500ml (2 cups) chicken stock
  • 100g (1/2 can) low-carb noodles, (or rice vermicelli)
  • 2 tsps lemongrass paste
  • 1 tsp ginger paste
  • 125g chicken breast, (I used stir fry strips)
  • 125g (1/2 can) Asian stir fry mix, fresh or frozen
  • pepper, freshly ground to taste, freshly ground to taste

Instructions

  1. Place the stock, noodles, lemongrass and ginger in a medium saucepan and bring to the boil.
  2. Cook for 2 minutes (or 4 minutes if using vermicelli).
  3. Reduce the heat to a gentle bubble and add the chicken and cook for a further 3-4 minutes until the chicken is cooked through.
  4. Stir in vegetables and continue cooking for a further minute. Season to taste and serve.
